We are passionate about food and where it comes from. We focus on quality and sustainability, using vegetables as stars throughout our menus and finding the highest possible welfare standards when choosing meat or dairy suppliers. We buy organically and from small artisan producers committed to farming regeneratively.
We buy organic, local and seasonal fruit and vegetables from British suppliers wherever possible. This ensures that our fruit and veg tastes delicious, hasn't travelled hundreds of miles and hasn't been packaged in environmentally damaging single use plastics.
We love the sea and we try to only buy fish and shellfish which has been caught responsibly and without damaging trawling or netting techniques. Our crabs and lobsters are pot-caught, our fish brought in by small scale British boats, our scallops are hand-dived.
We focus on using plants as much as possible, viewing meat as a treat not an everyday necessity. We are opposed to cruel factory-farming and farming with cages and will only ever use meat and dairy which is free-range and organic. We support regenerative ways of farming which focuses on animal welfare, healing damaged ecosystems and combating climate change. Likewise our eggs will only come from hens who are free to roam.
